Fudge Balls

These are really quick to make – the ingredients just need to go in a food processor and you get a snack which you can eat at home or take out with you. The balls in the first photo are rolled in melted chocolate and left to set but these balls are just as delicious without the chocolate covering.

Chocolate covered fudge balls

2oz (55g) almonds
4 oz (115g) dates, soaked for one hour
2 oz (55g) almond butter
1⁄2 oz (15g) cocoa powder

1. Place almonds in a food processor and grind finely. Add dates (drain) and process until they are thoroughly mixed.

2. Add almond butter and cocoa powder and mix in well. If necessary remove the mix from the processor and knead it, to thoroughly combine the ingredients.

3. Roll into balls and refrigerate.

Note. You can replace the cocoa with carob – but bear in mind carob is an acquired taste!
