Strawberry Mousse

Grab your stick blender for this quick and easy mousse. The strawberries add a lot to the flavour so find the ripest, tastiest strawberries possible. It serves four people.


12 oz (350g) silken tofu
3 floz (90ml) vegetable oil
4 oz (115g) caster sugar
6 oz (170g) fresh ripe strawberries, sliced
1 tsp vanilla essence
1 tbsp lemon juice

1. Blend all the ingredients in a blender until smooth.
2. Pour into individual serving dishes and chill for a few hours before serving.
