These are delicious and great for a quick snack. They are easy to make, but do require a food processor. Don’t soak the dates and raisins for too long and ensure to drain off all excess liquid after soaking, otherwise you may find the mixture is too moist.
Choco Coconut Cashew Bites
4oz (115g) cashew nuts
2oz (55g) desiccated coconut
4oz (115g) dates – soak 1 hour in cold water and drain
2oz (55g) raisins – soak 1 hour in cold water and drain
2 teaspoon vanilla essence
1oz cocoa powder
2 dessertspoons agave nectar
1. Grind cashews in food processor with desiccated coconut. Add remaining ingredients and process until smooth and blended.
2. Roll the mixture into balls (if necessary put it in the fridge for an hour or so to make it easier to handle). Coat in cocoa powder, desiccated coconut or sesame seeds if desired.
VARIATIONS
Rose - add 1 tbsp rose water
Orange - add 1 tsp grated organic orange peel
Chocolate-coated – melt 150g plain chocolate in a double-saucepan and use to cover the balls
