Choco Coconut Cashew Balls

Chocolate Coconut Cashew Bites
4oz (115g)  cashew nuts
2oz (55g) desiccated coconut
4oz (115g) dates – soak 1 hour in cold water and drain,
save the soak water
2oz (55g) raisins – soak 1 hour in cold water and drain
2 tsp vanilla essence
1oz cocoa powder
2 dssp agave nectar
Grind cashews in food processor with desiccated
coconut. Roll the mixture into balls (if necessary put it in
the fridge for an hour or so to make it easier to handle).
Rose – add 1 tbsp rose water
Orange – add 1 tsp grated organic orange peel
Chocolate-coated – melt 150g plain chocolate in a
double-saucepan and use to cover the balls

These are delicious and great for a quick snack. They are easy to make, but do require a food processor. Don’t soak the dates and raisins for too long and ensure to drain off all excess liquid after soaking, otherwise you may find the mixture is too moist.
